Set stock count

inventory:writeAuth Bearer keyIdempotentSets the absolute stock count. Send `expected_quantity` with the count you last read: if a sale changed it in the meantime the request is refused with `STOCK_CONFLICT` (409), so re-read and retry. An Idempotency-Key is required.
